PURPOSE:A lactic acid bacterium is inoculated to the medium of water extract from adlay and the lactic fermentation is carried out to produce said beverage of adlay lactic fermentation product having good smell, taste and high nutrition. CONSTITUTION:Adlay is subjected to hot-water extraction preferably in the presence of a starch-hydrolyzing enzyme to obtain the water extract or its concentrate. The product is, when necessary, mixed with other culture components and a lactic acid bacterium is inoculated to the resulting medium. Then, the lactic fermentation is effected and the product is, as it is, used as a beverage or after sweetness, thickener, flavor or others have been added, the product is employed as a beverage. |
