PURPOSE:To obtain the improved taste of a natural sweetening agent equal to the quality of natural sucrose, by adding potassium ions and delta-gluconolactone to the sweetening agent consisting mainly of the extract of Stevia. CONSTITUTION:Potassium phosphate is added to a natural sweetening agent consisting of the extract (E) of Stevia rebaudiana (Bert.) and a thick syrup of reducing malt sugar (maltitol) to adjust the pH to 6.5-8.0, preferably 6.6-7.2. 0.2-5.0% delta-gluconolactone based on E is added to the mixture, and if necessary 10-40% maltol based on E is incorporated. |
