PURPOSE:To prepare concentrated soybean protein (CSP) having high emulsifiability and visco-elasticity, even under an extraction condition which usually insolubilizes the proteins and reduces the emulsifiability, by extracting soybeams with an alcohol in an alkaline condition in the presence of an alkalizing agent. CONSTITUTION:Defatted soybean is extracted with an alcohol containing 50- 65v/v% of alcohol at 50-70 deg.C under alkaline conditions (pH 9-10) in the presence of an alkalizing agent (e.g. NaOH, Na2CO3, NH3, etc.). The cake (alcohol insoluble part) is dried and crushed to obtain the objective CSP. |
