<p>Chamber is of the type which has a built-in assembly for prodn. of smoke and/or steam and/or for cleaning the chamber, in partic. an automatic smoke generator. The assembly is now fixed to or/and built within a hinged door of the chamber. The assembly is pref. housed within the door and located against the outer face of the door, via which it is accessible through a covered opening in the outer face. Smoke or steam is pref. circulated in closed circuit through the door assembly into the processing chamber space and back. Circulation is pref. effected by a fan installed in the upper part of the chamber and drawing from the assembly via a suction pipe to deliver via distribution ducts into the chamber space. Processing chamber can be used for cooking, hanging, drying and cooling meat or fish.</p> |
