摘要 An acid-producing mutant of Saccharomyces cerevisiae HM-5(KFCC 10027), useful for the production of Takju(rice wine), was isolated after UV light irradiation. When brewing Takju using the acid-producing mutant as starter, the mutant produced lots of lactic and malic acid in mash.
