PURPOSE:To prepare a coating material for frying, which has high aging resistance of starch in a freezer, improves the palatability of fried foods, and prevents the separation of the food to be fried and oil, by adding waxy cornstarch saccharified to DE5-20, to a coating material. CONSTITUTION:Waxy cornstarch consisting of 100% amylopectin (entirely free of amylose) is saccharified to about DE5-20 with alpha-amylase, etc., and if necessary, decolorized and spray-dried. 10-40 Parts by weight of the saccharified starch is added to 100 parts of a raw material of coating material for frozen food for frying. |
