PURPOSE:To suppress the loss of consistency of boiled noodles, and to expand the allowable range of the boiling time of noodles, by adding powder of devil's-tongue or its hydrolyzate to noodles free of potassium carbonate. CONSTITUTION:Raw material of noodles free of potassium carbonate, such as wheat vermicelli, buckwheat vermicelli, macaroni, etc., is compounded with dried powder of tuberous roots of devil's-tongue or its hydrolyzate obtained by treating the powder with an acid, and formed to noodles. An aqueous solution of potassium carbonate is an indispensable component of Chinese vermicelli. |
