Delactosation of milk-based dispersions - by sepn. and enzymatic degradation of lactose and return of products to dispersion

Partial or total enzymatic degradation of a low-mol.-wt. substance (I), e.g. lactose, in an aq. polydisperse system contg. low- and high-mol. wt. substance (e.g. milk, whey or permeate) is carried out by (a) sepg. (I) and enzymatically degrading it without mixing the enzyme with the aq. polydisperse system, and (b) returning the degradation prods. to the aq. polydisperse system. The process is pref. carried out in a double tube arrangement in which the inner tube is permeable to (I) and impermeable to the enzyme. The enzyme is contained in (or passed through) the inner tube, and the aq. dispersion is contained in (or passed through) the space between the inner and outer tubes. The process avoids auto-inhibition due to build-up of degradation products and avoids attrition problems associated with the use of immobilised enzymes.
