In bottling carbonated beverages containing albumen, the beverage, e.g. beer, while maintained under high pressure, is first sterilized or pasteurized by heating, and before passing to the pressure filling machine, is cooled to a temperature sufficiently low to avoid coagulation and precipitation of the albumen when the filled container, e.g. bottles, are removed from the pressure filling machine. Any difference in temperature between the bottle and the beverage at the time of filling should be sufficiently small, e.g. not greater than 35 DEG C., preferably from 25 DEG to 30 DEG C., to preclude release of carbon dioxide from the beverage and bottle cracking. At the time of filling, i.e. after preliminary hot water washing and U.V. irradiation, the temperature of the bottles is preferably within the range 55 DEG to 65 DEG C. The apparatus used is suitably that described in Specification 842,809 modified by the inclusion of a cooler arranged between the heater and filling machine. Both heater and cooler are preferably closed plate-type heat exchanger systems and the filling machine used may be that described in Specification 482,285. |
