PURPOSE:To produce tempura rapidly and efficiently, by pouring a heated frying oil on the doughs filled into forms, and by introducing the hardend doughs into a frying oil bath, in the continuous automatic fryer. CONSTITUTION:The conveyor with a plurality of forms 14 is preheated in the heating bath 2 connected to the frying bath 1, and the precharged oil 6, doughs 7, and materials 9 are put into the forms 14 in order. The heated frying oil is then poured from the shower trays 10 to penetrate the oil into the doughs 7 and to harden the uneven surfaces. The forms 14 are moved to below the frying oil surface 13, and tempura products are taken out by the scraping conveyor 5. The solid content in the doughs, preheating temperature, and the temperature of frying oil to be poured are determined to produce the beautiful tempura with uneven surfaces. |
