<p>Before it is mixed with water, rice for bakery prods. contg. a large amt. of unpolished natural rice, is broken down in size, and a mixt. of rice and water is precooked to a pasty mass, in which the ratio of the wts. of rice and water is 1:1-1:3. Cereal flour and baking additives such as salt, yeast, and/or sourdough are added to the mixt. and the whole is kneaded into a dough which can be shaped and baked. Used for mfr. of bakery prods. having a large proportion of rice and for pref. 50% of rice, in which the formation of a sticky structure and a too crusty outer surface are avoided.</p> |
