PURPOSE:To prepare high quality fresh noodles preservable for a long period without discoloration, by dusting the noodles with flour containing a carbonate and an acidifying agent. CONSTITUTION:Fresh noodles are prepared by using specific dusting flour comprising (A) starch such as corn starch, potato starch, etc. and (B) 20-80wt%, pref. 40-60wt% of a mixture of (a) a carbonate such as sodium bicarbonate, sodium carbonate, etc., and (b) an acidifying agent such as acid phosphates, sodium fumarate, and potassium bitartrate. The weight ratio of (a)/(b) is 1:4-4:1. The pH of the dusting flour is 5.5-8.5, pref, 6.5-7.5, when attached to the surface of the fresh noodles. |
