摘要 A method of treating wines is disclosed which reduces total acidity without a significant change in pH, increases tartrate stability, and improves palatability. A portion of the wine is passed through a two step ion exchange system which employs a cation exchange column in the H+ form followed by an anion exchange column having a nonporous, amine type resin in the free base form, and the treated wine is then blended with untreated wine.
