Prepared by (a) adding a thickener such as flour or stock to a concentrated tomato juice containing about 12-13% solids. (b) Warming to thicken the mixture and drying on a drum drier. (c) Grinding the thin film obtained to a powder. The powder contains about 63% tomato solids, about 2.5% water, the remainder being thickener. Warming is pref. effected by steam injection at 104 degrees C until increase of 13% of the wt. of the mixture is obtained. The mixture is then pref. dried in a drum of 107 cm. diam. which rotates at 3 r.p.m. Drying temp. is pref. 113 degrees C in a relative humidity of 2.5%. The product may be used for flavouring of soups, sauces, juices, or for reconstitution with water. |
