<p>A vertical cylindrical vessel has an internal, coaxial, perforated metal, tubular partition tapering conically from a smaller end at the top of the vessel to a larger end at the bottom of the vessel. a door in the base of the vessel opens the full cross-section of the larger end of the tubular compartments. The door is pref. of the sliding type and can have a built in temp. regulating device, partic. a means of heating the vessel. The sliding movement of the door can be effected by jacking cylinders operating at right angles to the axis of the vessel. Leakproof closure of the door is pref. assured by pressure applied to the door in the direction of the axis of the vessel. Grape marc is held below the surface of the must by the taper of the inner compartment. The taper also facilitates discharge of marc from the inner compartment when the process is complete.</p> |
