PURPOSE:To obtain a jam or jelly as a pure food having a natural flavor, color, and luster, without degrading the nutritive value of the wakame, by concentrating a mixture of wakame seaweed, an acid, pectin, and sugar. CONSTITUTION:Wakame seaweed is ground or shredded, immersed in water containing vinegar, and boiled. The seaweed thus obtained is concentrated with water, pectin, an organic acid, e.g. citric acid, and suger in a vacuum evaporator under reduced pressure at 60 deg.C or below. Agar or gelatin may be added to the material in the final step to form a jelly. |
