Sugar containing foodstuffs, esp. breakfast cereals, containing: I NaH2PO4 or II a mixture of NaH2PO4 and Na2HPO4 The products show a markedly reduced tendency to cause dental caries, and those containing II are also far more stable to oxidation. The products contain at least 0.2% w/w of I and up to 1.5%, the upper limit being fixed by considerations of flavour. At least some of I is incorporated in an outer, sugary coating. Suitable cereals include honey flavoured puffed wheat, corn flakes, and rice crispies. |
