PURPOSE:To prepare cut rice cakes having smooth cut ends in high efficiency, by adding specially prepared rice meal to the just made rice cke, kneading the mixture to control the stickiness of the mixture, and slitting and cutting into pieces. CONSTITUTION:Steamed glutinous rice is pounded into a cake by conventional method. Two parts by weigtht of the rice cake just pounded is added with one part of rice meal obtained by pulverizing dried beta-rice cake, and the mixture is kneaded with a kneader. After the thorugh kneading, the mixture is charged into a hopper 1, rolled with a pair of rools 3, 3' to a required thickness, slitted with a pair of slitting rolls 4, 4' to rice cake strips, and cut into pieces with a cutter 6. Since the stickiness of the rice cake is controlled by the addition of the rice meal, the rice cake can be easily cut with a machine to obtain cut rice cakes having smooth cut ends. |
