A process for the manufacture of fat premixes and to an agent used in the process is described. The process is characterized by emulsifying the fatty substance used for the manufacture of the premix by means of a potato protein which is previously solubilized by an alkali treatment, the emulsion thus-obtained being atomized in the presence of an atomization support. The fat premixes which are thus- obtained are useful in animal and human feeding.
