摘要 <p>Process for solubilising Red No 3 FD and C (erythrosine) is principally the monohydrate of the disodium salt of 9-(0-carboxyphenyl)-6-hydroxy-2,4,5,7-tetraiodo-3H-xanthen-3-one is claimed. The dye is dispersed in a solvent of pH >4.5 in which a major part of the dye is dissolved. The dye is then fixed with a support. Then the dye is solubilised in an aq. soln. in the presence of gelatine for a sufficient time to stabilise it in aq. soln. below pH 4.5 to give an aq. soln. free of cloudiness and ppte. The pH is then adjusted to pH 4.5. A dry compsn. of the dye, which when dissolved at below pH 4.5 gives a soln. as above, comprises the dye fixed on a support and a stabilising amt. of gelatin. The dye is used in food and the above is applicable to the use in jelly desserts, sauces, decorations and drinks. The process overcomes the instability of the dye below pH 4.5 giving unsatisfactory solns.</p>
