<p>PURPOSE:A fat emulsion usable for nourishment supply before and after the operation, free from coarsening of particles, scarcely causing lowering pH in sterilization by heat, comprising an oil-in-water-type fat emulsion, and organic amine and a buffer as a pH adjustor. CONSTITUTION:(A) A vegetable oil is roughly emulsified in an aqueous solution of (B) an emulsifying agent, and a pH. adjustor cosisting of (C) an organic amine, e.g. lysine or arginine, and (D) a buffer, e.g. phosphoric acid or citric acid-phosphate is added and emulsified in said emulsion to form an oil-in-water-type fat emulsion comprising about 3-30W/V% of (A), about 3-5W/V% of (B), about 0.001-0.05W/V% of (C), 0.005-3.0mM of (D) and the balance of water, having a particle size <=2mu.</p> |
