1422436 Protein fibres RALSTON PURINA CO 30 Oct 1973 [30 Oct 1972] 50419/73 Heading A2B [Also in Divisions B4 and B5] An improvement on the process of 1269769, wherein a confined flowing stream of a fluid slurry of a proteinaceous material is heated under a pressure and temperature sufficient to coagulate the protein in said material and is then forced through a plurality of orifices and thereafter contacted with a cooling medium. The slurry on leaving the orifices is preferably at a temperature of 240-315‹F and a pressure of 50-5000 psig and the cooling medium preferably refrigerated water either as a spray or a cooling bath. Examples show the use of soy bean isolate as a 21% slurry coagulated at 290‹F and 1000 psig and at 280‹F and 5000 psig followed by extrusion. The product may be used as a non-meat protein source of food.
