PURPOSE:To provide a seasoned medium for pickling, which gives colorless, tasty pickles having uniform qualities, by a simple procedure, by using regenerated cellulose as a main component. CONSTITUTION:A regenerated cellulose prepared from cellulosic raw materials such as pulp, linter, etc., e.g. viscose rayon, cuprammonium rayon, etc., is formed to fibers, rods or cylinders having diameter of 0.01-5mm and length of 1-10mm, or spheres or granules having diameter of 0.1-10mm, or discs or flakes having a thickness of 0.01-5mm and maximum dimension of 1-10mm. Preferably 2- 20wt% of the solid component such as rice bran, sake lees, etc. in the medium is replaced with the regenerated cellulose. The medium is added with seasonings, sweeteners, thickners, salt, dyestuff, preservatives, etc., and diluted with water to the desired concentration or viscosity. Vegetables such as Japanese raddish, white muskmelon, etc. are pickles in the seasoned medium to obtain pickles having excellent color, taste and uniformity. |
