PURPOSE:To prepare the title uncooked noodle-like food having such preservation properties as to withstand the normal temperature distribution, by making noodles from a hydrous mixture of nonglutinous rice powder and starchy materials, glycine and an organic acid, and by sterilizing the pouched noodles with heat. CONSTITUTION:50 parts by wt. or more of nonglutinous rice powder is mixed with 50 parts by wt. or less of one or two or more types selected from a starch or stachy materials to form a hydrated mixture with a moisture content of 45-85wt.%, which is incorporated with 0.05-5wt.% of glycine and 0.01-0.4wt.% of an organic acid, e.g. citric or lactic acid, heated, gelatinized, and formed into a (partially) gelatinized plate. A powdery materials, e.g. rice or wheat flour, is scattered on the plate, allowed to stand at low temperature, and aged. After shaking down most of the powder, the plate is cut to a linear or any shape, which is sealed in a heat- resistant container or plastic pouch, and sterilized at such a temperature as to heat the central part of the uncooked noodle-like food at 70 deg.C or above. |
