PURPOSE:To prepare a nice rice cake having improved preservation at normal temperature and expanding restoration properties with hot water, by thawing a frozen rice cake in water, and by refreezing the cake. CONSTITUTION:A rice cake adjusted to a moisture content of about 45-55% in a solid state is rapidly frozen in an atmosphere at about -15 to -30 deg.C, and immersed and thawed in cold water. The thawed cake is then refrozen in an atmosphere at about -15 to -30 deg.C rapidly, and the cake thus frozen is kept at -20 deg.C or below and freeze-dried at a degree of vacuum of 0.05-1mmHg by the conventional method. |
