PURPOSE:To prepare a roux with a meat flavor and taste, by adding an adequate amount of yeast to a mixture of fats and oils with wheat flour before roasting. CONSTITUTION:Any yeast, which belongs to the genuses Candida, Saccharomyces, Pichia and Hansenula, in an amount of 2-40 parts by wt. is incorporated into a mixture of (a) fats and oils and (b) 98-60 parts by wt. of wheat flowr, and then roasted at 170-180 deg.C. |
