PURPOSE:To improve the preservability of noodles, and to prevent the hardening of noodles caused by the steam sterilization, by sterilizing noodles with hot cooking oil. CONSTITUTION:Boiled noodles are washed with water, cooled, and sterilized with hot water or steam in a sterilizer A. The sterilized noodles are fed into the hopper of an oil-sterilizer B, and put on a partitioned metal net conveyor 8 running through the space between hot-oil nozzles 9 and an oil tank 10. The noodles are applied dropwise with hot oil from the nozzle 9, and the excess oil is drained off with an electromagnetic vibrator 22. The oiled noodles are discharged through a hopper 14, and packed to obtain the final product. |
