PURPOSE:To color candies, etc. in excellent tint free from turbidity, stably, in a wide pH range, by the use of a specific natural color. CONSTITUTION:A red color extracted from red cabbage is added to the raw material (pH<=7.0) of candies such as candy, jelly, chewing gum, popsicle, sherbet, ice cream, custard pudding, etc. The extraction is carried out by (1) immersing the leaves or stalks of red cabbage in water containing <=1% of potassium sulfite or an aqueous solution containing <=1% of potassium sulfite and <=40vol% of ethyl alcohol, (2) adding sulfuric acid to the extract, (3) concentrating the mixutre to remove the sulfurous acid, (3) precipitating the impurities by adding alcohol, and (4) concentrating the filtrate to dryness. |
