PURPOSE:A specific flour is employed to obtain title coating material that gives suitable viscosity as batter in spite of adding a wide volume range of water, thus being unnecessary for precise control of added water and preventing the batter from rapid increase in viscosity caused by addition of table salt or stirring. CONSTITUTION:White corn flour, which can be obtained by atomizing white corn of low content of yellow pigments as carotinoid into fine powders below 80 mesh, is used as the major ingredient, over 50wt% of the total coating material, to prepare said tempura coating. |
