In the sepn. of N-acetyl amino acid sodium salts from aq. solns. contg. sodium acetate, the N-acetyl amino acid sodium salt is crystallized from a soln. with a water content sufficient to dissolve the Na acetate. Used in recovery of N-acetylamino acids, e.g. in stereo-selective enzymatic hydrolysis of N-acetyl amino acids. The simple process that permits up to 90% of the amino acid deriv. to be recovered from solns. with a high content of racemate. Pref. the water content of the soln. is adjusted to 45-75 wt %, and the N-acetyl amino acid sodium salt is crystallised out at 0-30 degrees C. After sepn. of the amino acid Na salt, Na acetate is pref. pptd. in crystalline form as the trihydrate at -5 to +30 degrees C after adjusting to a water content of 30-50 wt %.
