PURPOSE:To obtain a gelled multi-layered food, such as those composed of a coffee jelly layer and a cream layer, a custard pudding layer and a caramel sauce layer, etc. by charging a cup with processed food components in layers, and cooling the components while preventing the inter mixing of the layers. CONSTITUTION:Each food component which can be gelled by cooling, is whipped with a continuous whipper near the gel-initiation temperature, and poured into a cup with an over-run of 10-100% to form a layer. The whipped component has high shaperetainability even near the gel temperature, and maintains clear boundary between the other whipped component poured upon the first component. EFFECT:Waiting period in each process can be eliminated, and the operation can be carried out continuously. |
