PURPOSE:To obtain a composition for fry coating capable of giving fritters with a dry touch, having improved uniform adhesion to the surface and texture, comprising a water-dispersible complex consisting mainly of beta-1,4-glucan and a starchy material. CONSTITUTION:A composition comprising (A) a starchy material, e.g. wheat fluor, and (B) 0.2-30 wt% based on A of a complex obtained by grinding and kneading 50-95 wt% of powdery beta-1,4-glucan, e.g. microcystalline cellulose, with 5-50 wt% of (a) a dispersing agent, e.g. karaya gum or carrageenan, and (b) a disintegrator, e.g. sucrose or dextrin, at a weight ratio of (a) to (b) of 9:1-1:9 in the presence of water, and by drying the mixture. |
