PURPOSE:To prepare instant noodles having high alphatization degree and easily reconstituted to fresh noodles, by alphatizing noodles with micro-wave heating, and at the same time, drying by dehydration. CONSTITUTION:Fresh noodles containing 30-40% of water, are subjected to micro-wave heating in an hot and humid atmosphere (e.g. 90 deg.C, 95% rh). The starch in the noodle is rapidly converted to alpha-form, and the water is diffused from the inner part to the surface in gaseous state to effect the dehydration and drying. |
