<p>A process for treating acid whey or lactoserum from cheese mfr. comprises ultrafiltration through a membrane form a protein rich fraction and an ultrafiltrate having a 68-87% lactose content with 6% protein, calcium citrates and monovalent phosphate salts. The filtrate is heated at 80-93 degrees C and concentrated to 40-45% solids to ppte the calcium citrates without substantial pptn. of the phosphates. The ppte is then sepd. and the filtrate is further concentrated to crystallise the lactose which is then sepd. The process enables a high yield of relatively pure lactose, recovers commercially useful salts, and avoids harmful pollution from mother liquors.</p> |
