PURPOSE:To prepare a water-soluble antioxidant having high safety, useful to prevent the oxidation of fish products and meat products, economically, by adding water and activated charcoal to an extract of rosemary or sage, and distilling off the solvent from the mixture. CONSTITUTION:Rosemary, sage or their mixture is treated with methanol or ethanol containing 40-60% of water to extract the antioxidant component. The extract is added with 3-8 parts, pref. 5 parts by weight of water, based on 1 part of the natural spice, to precipitate the water-insoluble antioxidant component, and further added with activated charcoal. The solvent is distilled off from the filtrate obtained by filtering the above mixture, if necessary after adding a stabilizer such as lactose, dextrin, inositol, sorbitol, amino acids, etc. to the mixture. |
