After the dough for a prod. from flour, fluid and yeast has been kneaded and before rising, fine salt is sprinkled through a stencil on to the upper surface. The salt remains in the outline formed by the stencil, and after the portions have been allowed to rise, they are baked. During baking the salt and the crust react to form an "etched" pattern. By this simple procedure patterns and decorations can be produced on the surface of leavened bread. |
