Pastry tester using probe - measures resistance or capacitance of sample to assess quality of baking

The pastry tester indicates the condition of pastry during baking. A rod consisting of a central conductor is an insulating sleeve which is in turn surrounded by an outer conductor is inserted in the pastry. The two conductors are connected to an ohmmeter. The pastry resistance changes as it begins to bake. Thus the condition of the pastry can be read directly on the ohmmeter. Another solution is to measure the capacitance between the conductors using a capacitance bridge.
