<p>PURPOSE:To prevent the degradation of MOROMI (unrefined liquor, especially Japanese rice wine) and to produce a high-quality liquor, by placing a net or a perforated plate capable of inhibiting the floating of grains in the MOROMI, thereby enabling the fermentation of MOROMI without causing the floatation of the grains. CONSTITUTION:Fermentation of MOROMI is carried out preventing the floatation of grains on the surface of MOROMI by placing a net or a perforated plate capable of inhibiting the floatation of grains in the MOROMI at an arbitrary position under the surface of the MOROMI. The pore size of the net or perforated plate is selected to inhibit the passage of the grains in the MOROMI, i.e. to be smaller than the outer diameter of the grain. It is preferably e.g. 2-10mm, especially 3-8mm. The net or perforated plate is placed at an arbitrary position below the surface of the MOROMI by a means to inhibit the floatation of the grains or to precipitate the grains. For example, a frame having the shape corresponding to the cross-section of the fermentation tank is produced, a net is extended over the frame, and the frame is dipped into the MOROMI from above.</p> |
