PURPOSE:To prepare highly nutrious and tasty dressing free from soybean odor, containing much vegetable proteins, by mixing ''miso'' with necessary amount of fuit juice, etc. CONSTITUTION:''Miso'' of low salt content (salt content of 6-7 wt%) is mixed with 10-30 wt% of fruit juice (e.g. tomato juice, apple juice, orange juice, etc.), <= 10 wt% of vinegar and <= 5 wt% of vegetable oils. If necessary, the dressing may contain an emulsifier to prevent the coagulation of the vegetable oil. Heat treatment of the dressing at >= 70 deg.C for >= 30 minutes further improves the preservative effect. |
