PURPOSE:To obtain the titled compound useful as an additive for foods, cosmetics, medicaments, etc., in high yield, by subjecting sucrose to ester interchange reaction with a lower alkanol ester of a fatty acid, etc., in the presence of a specific cation exchange resin. CONSTITUTION:Sucrose and a lower alkanol ester of a fatty acid or glycerides are subjected to ester interchange reaction in the presence of a cation-exchange resin which is ion-exchanged with an alkali metal and/or alkaline earth metal (preferably having basicity or carboxylic acid group as a functional group) to afford the aimed compound.
