Process for cleaning food-handling equipment by the alternating use of an alkaline and an acidic cleaning agent. The alkaline cleaning agent is a low-foaming product comprising a low-foaming surfactant combination that in turn contains a low-foaming nonionic surfactant and a low-foaming ampholytic surfactant. The process is efficient and comparable with the use of an alkaline dish- washing agent in the normal reduced amounts, especially in hard water. |
