摘要 PURPOSE:To manufacture machine-made noodles resembling handmade ones in appearance, by semi-drying a narrow strip of kneaded dough, folding the semidried strip after aging, slitting with a kitchen knife, packaging, and sterilizing with heat. CONSTITUTION:A narrow strip of dough obtained by kneading wheat flour with saline water and propylene glycol, etc., is hung on rods 6 and transferred through a chain conveyor 8 and an ascending life 6 to a dryer 10. About 17-18% of water existing in the surface layer of the dough is removed in the dryer 10 at 65-70 deg.C and about RH 60%. The semi-dried dough is aged in aging chambers 16, 19 for 60-70 minutes. After the aging, the strip is removed from the rod, folded to proper size slitted with a knife 21, packed with a heat-resistant packaging material, and sterilized at about 80 deg.C.
