The novel use of an enolic OH substituted derivative of ascorbic acid selected from the group consisting of inorganic esters, aliphatic or alicyclic esters, and O-alkyl ethers of ascorbic acid as bio-available vitamin C in food products containing anthocyanin and/or anthocyanidin pigments. Food products containing said ascorbic acid derivative are color stable. They can be produced by combining a food base with said ascorbic acid derivative prior to consumption.
