PURPOSE:To obtain novel artificial granules useful as foods, by gelatinizing only the outer layers of gelatinizable edible material sol enclosing an edible sol material. CONSTITUTION:An edible sol material, e.g. salad oil, as an inner phase is enclosed by an edible sol material, e.g. a 30% aqueous solution of low esterified pectin, which is incompatible with the phase and can be gelatinized chemically, to give granules. The granules are then brought into contact with an aqueous solution of a chemical gelatinizing agent, e.g. calcium lactate, to form gel coats on the outer layers of granules which are artifical granules for oral administration, e.g. foods, and feeds for cultured fish and cattle. |
