The object of the procedure in this patent uses natural pepper as the raw material and, more specifically, fresh sweet red pepper. It includes an initial phase which consists of crushing the raw material and subsequently evaporating part of the water contained at the time of its sterilisation. Thus, a pepper concentrate is obtained, to which water is added to produce rehydration and homogenisation, the water being present in a ratio of between 50 percent and 300 percent of the quantity of pepper concentrate. Following homogenisation, sodium alginate is then added in a ratio of between 1 percent and 5 percent, and guar gum in the ratio of 0.1 percent to 1 percent of the total, so that it is all ready to undergo a second homogenisation in order to dissolve the added products. The mixture of pepper concentrate, water, sodium alginate and guar gum is poured on to a chute either by unloading from the mixer homogeniser by gravity or by pumping the mixture with a suitable motor pump. The rest of the procedure must be carried out in a special machine. |
