PURPOSE:To emulsification-disperse stably and harmlessly a substance contg. hydrophilic and hydrophobic phases by adding mixed gummy matter of pullulan and gum arabic in a specified ratio to the substance. CONSTITUTION:0.1-200 wt% of mixed gummy matter of pullulan and gum arabic in a ratio of 2:8-7:3 by wt. is added to a substance contg. one to several kinds of hydrophilic phase substances and one to several kinds of hydrophobic phase substances or naturally available various substances such as meat, and the substance is emulsification-dispersed by use of a mechanically forced emulsification-dispersing device such as mixer, homogenizer or votator. Unlike a conventional surfactant the harmless mixed gummy matter of this method does not turn to harmful and is freely applicable to various fields. |
