The invention relates to a method of taking off hot water from a storage tank. There is arranged at the entrance of the drawing circuit a thermostatic mixing battery (13) adjusted to provide water at a predetermined average temperature, and two pipes for taking off hot water from the tank are made to end at this mixing battery, one of these pipes (14) opening essentially in the middle of the tank, in a zone where the temperature of the water is generally close to or slightly lower than said predetermined temperature, the other pipe (15) opening in the upper part of the tank in a zone where the temperature of the water is distinctly higher than said predetermined temperature, the take-off being carried out as a priority by the pipe (14).
