PROBLEM TO BE SOLVED: To produce gel like matter having sufficient strength or elasticity and excellent heat resistance and not lowering physical properties at a time of use or keeping by charging a dispersion of polysaccharides heated to specific temp. in a baking mold and heating the same to form gel like matter and cooling the gel like matter to take out the same from the baking mold. SOLUTION: At first, a dispersion of polysaccharides heated to 17-60 deg.C is charged in a baking mold 1 and heated to 85-95 deg.C for 1-5min to form gel like matter. In this manufacturing process, the dispersion of polysaccharides is advanced in gelling to a certain degree in a stage heated to 17-60 deg.C and further heated to accelerate the gelling of the surface layer part of the gel like matter. The gel like matter is cooled to 17-75 deg.C to be taken out of the baking mold 1. This manufacturing process accelerates the gelling of the interior of the gel like matter of which only the surface layer part is gelled in the previous process. Since gelling is accelerated by two-stage processes as mentioned above, the gel like matter is excellent not only in strength or elasticity but also in heat resistance. |
