PURPOSE:Gelatin gel is lowered in the melting point, then made amorphous, incorporated with a saccharide, then made into granules, thus producing title composition readily dispersing and dissolving in city water at room temperature and readily giving jelly when the resulting sol solution is cooled. CONSTITUTION:A gelatin aqueous solution or extract obtained in the production of gelatin is incorporated with 3 - 30, preferably about 5 wt%, based on the gelatin, of an acid as lactic or acetic acid, and heat treated at 60 - 100 deg.C for 4 sec to 60 min to lower the melting point of the gelatin in the range from 23 to 29 deg.C. The heat- treated aqueous solution is rapidly dewatered while it is kept in the sol state to make the gelatin amorphous. The dehydrated powder is mixed with a saccharide in more than double amount of the powder and they are agglomerated in a steam atmosphere to form the granules. |
