PROBLEM TO BE SOLVED: To provide an inhibitor of degradation odor generated during storing foods containing laurate-based oil and fat such as coconut oil, palm kernel oil or milk fat and a manufacturing method of emulsified foods having a process of adding the inhibitor of degradation odor to foods containing the laurate-based oil and fat and mixing them.SOLUTION: The above described problem is solved by containing a protease degradation article of a protein having molecular weight of 100 to 30,000 obtained by concentrating the protein amount from soybean, pea, broad bean and adzuki bean to 25% or more of a solid component and effecting protease at protein concentration of 1% to 15% and pH 5.0 to 8.0.SELECTED DRAWING: None |
